Down in Fountain Square, the new menu rolled out at Thunderbird. Rook's Carlos Salazar designed the menu along with Andrew Whitmoyer,
who took over as kitchen manager and is executing dishes like this unbelievably good pork belly/cornmeal waffle/greens/apple butter dish. The dishes there are not modern spins on Southern food, but honest-to-goodness, just-like-Grandma kind of homestyle food, plated with artful modern care. Having tasted this dish, I can honestly say it's a knockout.
Don't worry though, Salazar isn't bored. He's still head chef over at Rook. Head to Fletcher Place to warm up with some cod nuggets:
